Cocktail: Honey Peach Margarita

Our beautiful sunny day clouded over here in upstate New York, but this drink evokes sunshine nonetheless. I’ve been trying to branch out a bit and experiment with the margarita formula (which is itself in the daisy family), and this is my latest effort.

  • 2 oz reposada tequila
  • 1 oz lime juice
  • 3/4 oz Gran Gala
  • 1/2 honey syrup*
  • 1/4 peach schnapps

It’s not bad, but it’s a bit soft, if that makes sense. When I try it again, I think I’d rather use muddled fresh peach in place of the schnapps, and I would reduce the Gran Gala a bit, since both the peach and the honey are sweet enough. It’s possible replacing the Gran Gala with dry curaçao would work well.

*You can make honey syrup by combining equal parts water and honey in a saucepan and heating over low heat while stirring gently, until the honey is dissolved. The honey in my current batch of syrup is the spring honey from Where the River Bends Farm in Schaghticoke, NY. It’s quite a bit lighter and less earthy than the honey from my family’s farmland in North Dakota (which I’ve used previously).
