Today’s Bake

Another attempt at Paul Hollywood’s Basic Wholemeal Bread.

I was quite pleased with this go, right up to the end. The ingredients came together, and I felt that I finally did a proper job kneading the bread. I let it prove in my office, which is warmer than the kitchen (I keep it covered with a tea towel usually).

It looked good going into the second rise as well.

I may have over-floured it a bit by mistake, but that wasn’t really a problem. However, in an attempt to avoid the error made the last few times, I didn’t make my slashes deep enough.

You can see in the final loaf that it pulled away from the base, rather than splitting gently at the slashes.

But the texture and flavor were quite decent, so overall I was reasonably pleased with it.
